Today I want to share with you all how I poach the perfect egg to place on top of my favorite meals. Everyone has their own yolk preference , but for me I love my yolks runny. There is something about biting into a yolk and having it run all over your food that makes it just that much tastier and fun. It also works as a great dressing over some cous cous, rice or quinoa, which is one of my favorite meals; simple but delicious.

Step 1: Fill a pot 2/3 full with water.
Step 2: Add a dash of salt & bring water to a brisk simmer.
Step 3: Crack egg into a small bowl, being careful not to break the yolk.
Step 4: Create a whirlpool by stirring the water in a circular direction with your spatula.
Step 5: Drop egg carefully into the center of the whirlpool.
Step 6: Stir the outer portion of the water in a circular direction to avoid egg white from feathering, for just a few seconds.
Step 7: Allow egg to cook for 3-5 minutes depending on how hard you want you yolk.
Tip: For that perfectly runny yolk cook for 3 minutes.
Step 8: With a slotted spoon carefully removed egg from water and place on a paper towel to dry.
Step 9: For second egg repeat steps 3-7.
Step 10: With 30 seconds remaining, take first egg and place it back in the pot with the second egg to reheat.
Step 11: Remove both eggs with a slotted spoon and place on paper towel to dry.
Step 12: Add your perfectly poached eggs to your favorite dish.
Tip: The fresher the eggs the less feathering you will have in the pot.
Step 13: Enjoy!
