- 1/2 Whole wheat pita
- Handful organic arugula
- Grilled Chicken strips (~ 6 pieces)
- 1/2 Avocado slices
- 2 tbsp Eggplant garlic spread with sweet red peppers (Trader Joes)
Method
- Fill 1/2 pita with chicken strips & eggplant sauce.
- Place in toaster oven or in oven at 350 degrees for 5 minutes or until chicken is warm and pita is toasted.
- Add remaining ingredients into pita.
- Enjoy!
